LEMON LIME TOASTED COCONUT DONUTS! GF DF

lemon lime + toasted coconut donuts

Easy, delicious, and they're gluten + dairy free!

Who doesn't love a good donut?

Especially when it's healthier for you! This recipe is incredibly easy, takes about 30 minutes to make, and tastes so. good. They go perfectly with a fresh cup of hot coffee.

If you don't have this already; I suggest getting a silicone donut mold. I found a set of three on Amazon but I believe you can find them at Canadian Tire as well! When I get better at this whole blog thing - I'll link everything for you...for now...it's just the basics ;). 

Ingredients:

DONUTS

- 1 + 1/4 cup 1 to 1 gluten free baking flour

- 1 tsp baking powder

- 1/2 tsp salt

- 1/2 cup coconut sugar

- 1-2 tsp fresh lemon + lime zest

- 2 + 1/2 tbsp melted coconut oil

- 1 egg

- 3/4 cup full fat coconut milk

 

GLAZE

- 1 cup confectioner's sugar

- 1-2 tbsp fresh lemon and lime juice

- 1 tsp lemon and lime zest

- pinch of salt

 

TOPPINGS

- unsweetened shredded coconut

- lemon + lime zest

 

HOW TO:

Preheat your oven to 350 F. Add flour, baking soda, salt, and sugar to a bowl (you can also use your Kitchen Aid for this) and mix until combined. In a small bowl add melted coconut oil, zest, egg, and coconut milk and stir until fully combined. Add wet ingredients to dry. Fold in or mix until the wet and dry ingredients are just blended together. You don't want to overdo it or it could make your donuts tough. We don't want that!

The dough will look thick. Add it to a piping bag (or a ziploc bag with the tip cut off), and start filling your silicone molds! If you don't have silicone molds you can use non stick ones. Just make sure you grease them with a bit of coconut oil first :). The dough will look stiff in the molds so to get them looking even just shake the molds a bit until the dough relaxes (I hope this makes sense!). 

Put the donuts in your oven for about 11-14 minutes. 14 minutes was the perfect for me but everyone's ovens are different. You want the donuts to be firm and slightly golden on the top. 

Remove donuts from the oven and let them cool completely before removing them from the mold. Add some unsweetened shredded coconut to a pan on medium heat and toss until it is toasted to your liking. 

Once the donuts have cooled - make your glaze. Add the sugar, lemon and lime juice, and pinch of salt to a bowl and whisk until combined. Dip each cooled donut into the glaze, set it on a cooling rack or parchment paper, and top with lemon and lime zest, and toasted coconut. 

It will take about 5-6 minutes for the glaze to set.
